Yield:10 servings
 
      1 lb Dried Blackeyed Peas              1/2 ts Chili powder
  2 1/2 qt Water                               1 ts Black pepper
      1 lb Hog Jowls, Cubed                    1 tb Salt
      1 c  Chopped Onion                       1 c  Uncooked Rice
 
  Soak peas in water overnight, brown cubed hog jowls over moderate heat
  until it begins to brown. Add onion and continue cooking until onion is
  tender. Drain off grease. In a large iron pot, combine soaked peas, water,
  (adjust water as required to keep mixture from drying out) chili powder,
  black pepper, salt and meat and onion mixture. Cover pan, bring to a boil,
  then simmer until beans are tender, about one hour. Stir in rice and cook
  without stirring 20 to 30 minutes longer, or until rice is tender and
  fluffy. Be sure that there is enough water in the mixture to cook the rice.
