HAWAIIAN PINEAPPLE CHICKEN

Yield: 6 servings
 
      3 tb Vegetable oil                     1/2 c  Macadamia nuts, chopped
      2 c  Cooked, boned chicken cut         1/2 ts Sugar
           -into small chunks                1/2 c  Chicken stock
    1/2 c  Celery, diced                       1 c  Fresh pineapple, cut in
    1/2 c  Scallions, finely sliced                 -chunks
      2 tb Soy sauce                      
 
  Heat oil in wok, or skillet, and saute chicken, scallions and celery for 3
  minutes.  Stir in soy sauce, nuts and chicken stock.  Cover and simmer for
  5 minutes.  Add pineapple and simmer another 3 minutes. **If macadamia nuts
  are not available, use brazil nuts.
