CURRIED COCONUT CHICKEN BALLS

Yield: 6 servings
3/4 c Flaked coconut 1 c Chopped walnuts
3 oz Cream cheese, at room 2 tb Minced onion
-temperature 1 1/2 tb Curry powder, to taste
2 tb Mayonnaise 1/2 ts Salt
1 c Chopped cooked chicken
1. Preheat oven to 350ø. Spread out coconut on a small baking sheet & toast
in oven until lightly brown, 12 1/2 minutes. Let cool slightly.
2. In a small bowl, blend together cream cheese & mayonnaise until smooth.
Add chicken, walnuts, onion, curry powder & salt. Mix well.
3. Form chicken mixture into 1" balls. Roll in toasted coconut to coat.
Cover & refrigerate until chilled.
