CHICKEN WITH OLIVE AND CAPER SAUCE
Yield: 4 servings
1 Frying chicken (about 2 1/2 2 Garlic cloves, minced
-lbs), cut up 1/2 c Sliced stuffed green olives
1/4 c All-purpose flour 2 tb Capers
1 ts Salt 1 tb Caper liquid
1/4 ts Pepper 2 tb Water
3 tb Butter or margarine 1/4 c Chopped parsley
Roll chicken in flour seasoned with salt and pepper. Brown in butter. Cover
and cook slowly for 40 minutes. Add remaining ingredients; heat.
Makes 4 servings.
